Ingredients
1 ¾ cups all-purpose flour
2 tablespoons unsweetened natural cocoa powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup brown sugar, packed
1 large egg
¼ cup buttermilk
1 teaspoon vanilla extract
1 tablespoon red food coloring
6 ounces cream cheese, softened
¼ cup unsalted butter, softened
1 ½ cups powdered sugar
½ teaspoon vanilla extract
Instructions
1. In a mixing bowl, whisk together flour, cocoa powder, baking soda, and salt.
2. In a separate large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
3. Add egg and beat until incorporated. Mix in buttermilk, vanilla, and red food coloring.
4. Gradually mix in the dry ingredients just until combined. Cover and refrigerate for 30 minutes.
5. Preheat oven to 350°F and line a baking sheet with parchment paper.
6. Scoop tablespoon-sized balls of dough and place 2 inches apart on the sheet.
7. Bake for 9–11 minutes until just set. Cool on the baking sheet for a few minutes, then transfer to a wire rack.
8. To make the filling, beat cream cheese and butter until smooth. Add powdered sugar and vanilla and beat until fluffy.
9. Once cookies are cool, pipe or spread filling onto half and top with another cookie to sandwich.
10. Chill before serving for best texture.

These cookies are best enjoyed slightly chilled.
You can freeze assembled cookies for up to 2 months.
