Ingredients
1 tablespoon olive oil
1 medium yellow onion, chopped
2 carrots, sliced
2 celery stalks, diced
3 garlic cloves, minced
4 cups green cabbage, chopped
1 can (14.5 oz) diced tomatoes
6 cups vegetable broth
1 teaspoon Italian seasoning
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)
Instructions
1. Heat olive oil in a large soup pot over medium heat. Add the chopped onion, carrots, and celery. Cook until softened, about 5–7 minutes.
2. Stir in the minced garlic and Italian seasoning. Cook for another minute until fragrant.
3. Add diced tomatoes and vegetable broth to the pot. Stir to combine.
4. Add the chopped green cabbage. Cover and simmer for 20–25 minutes until the cabbage is tender.
5. Season with salt and pepper to taste. Let rest a few minutes before serving to deepen the flavor.
