Ingredients
1 lb chicken thighs
2 tbsp Cajun seasoning
12 oz fettuccine pasta
2 cups heavy cream
1 cup grated Parmesan cheese
2 tbsp hot honey
1/2 cup fresh basil leaves
3/4 cup crumbled feta cheese
2 cups Brussels sprouts, halved
2 tbsp olive oil
3 cloves garlic, minced
salt and pepper to taste
Instructions
1. Trim and halve the Brussels sprouts, toss with olive oil, salt, and pepper. Roast at 400°F until golden and crispy.
2. Season chicken thighs generously with Cajun seasoning. Sear in olive oil until fully cooked and golden. Rest and slice.
3. Cook fettuccine pasta in salted boiling water until al dente. Reserve some pasta water and drain.
4. In the same skillet, sauté garlic until fragrant. Add heavy cream and simmer. Stir in Parmesan until smooth, thinning with pasta water as needed.
5. Blend feta, basil, olive oil, and a splash of warm water into a creamy swirl.
6. Add cooked pasta to the Alfredo sauce and toss to coat. Plate pasta, top with Cajun chicken, spoon on basil feta, drizzle with hot honey, and sprinkle with crispy Brussels chips.
Notes
This dish is best served fresh but reheats well with a splash of cream.
Use thinly sliced chicken breast if thighs aren’t available.
Adjust the hot honey drizzle depending on your spice preference.
