Description

Ingredients

1.5 pounds beef chuck roast, cut into 1.5-inch cubes

2 tablespoons olive oil

1 large yellow onion, chopped

3 cloves garlic, minced

4 large carrots, peeled and chopped

3 medium Yukon Gold potatoes, peeled and diced

3 cups beef broth

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

0.5 teaspoon black pepper

1 tablespoon cornstarch (optional)

1 tablespoon water (optional)


Instructions

1. Set the Instant Pot to Sauté mode and heat 1 tablespoon of olive oil. Add half the beef cubes and brown them on all sides. Remove and repeat with remaining beef. Set all browned beef aside.

2. Add the remaining oil to the pot, followed by the chopped onion. Cook for 3–4 minutes until softened. Add garlic and cook for another 30 seconds.

3. Pour in a splash of beef broth and use a wooden spoon to deglaze the pot, scraping up browned bits. Stir in tomato paste and Worcestershire sauce.

4. Return the browned beef to the pot. Add in the carrots, potatoes, thyme, rosemary, salt, and pepper. Pour in the rest of the beef broth and give everything a gentle stir.

5. Seal the lid and cook on high pressure for 35 minutes. Let pressure release naturally for 10 minutes before doing a quick release.

6. If a thicker stew is desired, mix cornstarch and water into a slurry. Switch to Sauté mode and stir it into the stew until thickened.

7. Serve hot with crusty bread or your favorite side.

Notes

Use chuck roast for best tenderness.

The stew gets even better the next day.

Optional red wine (0.25 cup) adds depth to the broth.
