Ingredients
1.5 lbs ground beef
2 large yellow onions, sliced
2 eggs
1 cup breadcrumbs
1/2 cup beef broth
1 tablespoon Worcestershire sauce
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon butter
4 slices Swiss cheese or provolone
2 tablespoons ketchup or tomato paste
Instructions
1. In a skillet, melt butter over medium-low heat and add sliced onions. Cook for 25 to 30 minutes until deeply golden and caramelized. Set aside.
2. In a large bowl, combine ground beef, breadcrumbs, eggs, minced garlic, Worcestershire sauce, beef broth, thyme, salt, and pepper. Mix just until combined. Fold in half of the caramelized onions.
3. Shape the meat mixture into a loaf on a parchment-lined baking sheet or press into a loaf pan. Top with remaining onions.
4. Bake at 375°F for 40 to 45 minutes.
5. Add Swiss cheese or provolone slices on top and return to the oven for 10 minutes until melted and bubbly.
