Ingredients
6 cups rustic bread cubes (dried)
1/2 cup unsalted butter
1 cup chopped celery
1 cup chopped onion
2 cloves garlic, minced
2 1/2 cups chicken or vegetable broth
2 large eggs
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh sage
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 275°F. Cut the bread into 1-inch cubes and spread on a baking sheet. Bake for 45 minutes, tossing halfway through, until dry and slightly crisp. Let cool.
2. In a large skillet, melt the butter over medium heat. Add chopped onion and celery and cook until soft, about 8 to 10 minutes. Stir in minced garlic and cook 1 minute more. Add herbs and remove from heat.
3. In a large bowl, combine the toasted bread with the sautéd vegetable mixture.
4. In another bowl, whisk the broth, eggs, salt, and pepper. Pour over the bread mixture and gently stir to coat evenly.
5. Transfer to a greased baking dish. Cover with foil and bake at 350°F for 30 minutes. Remove foil and bake another 15 to 20 minutes until golden brown on top.
6. Let the stuffing rest for 5 to 10 minutes before serving.

Use hearty bread like sourdough or French for best results.
Make it ahead by assembling and refrigerating the unbaked dish up to 1 day in advance.
