Description

Ingredients

2 boneless skinless chicken breasts

1 cup fresh basil leaves

3 cloves garlic minced

2 tablespoons olive oil

1 cup cherry tomatoes halved

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon lemon juice


Instructions

1. Season the chicken breasts generously with salt and pepper on both sides. Let them sit at room temperature while you prep the other ingredients.

2. Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for about 30 seconds until fragrant.

3. Place the chicken breasts in the skillet and cook for about 6–7 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.

4. In the same skillet, add halved cherry tomatoes and cook for 2–3 minutes until they begin to soften. Stir in the fresh basil leaves and cook just until wilted.

5. Return the chicken to the skillet and spoon the tomato-basil mixture over it. Drizzle with lemon juice and cook for another minute before serving hot.

Notes

Let chicken rest a few minutes before slicing to keep it juicy.

Use Genovese basil for best authentic flavor.

Adjust garlic and lemon to taste for your preferred balance.
