Ingredients
12 oz pappardelle pasta
1 lb Italian sausage
1 tbsp olive oil
4 cloves garlic, minced
1 medium yellow onion, chopped
2 bell peppers (red and yellow), sliced
1 can (14 oz) crushed tomatoes
1/2 cup dry white wine
1/4 cup fresh basil, chopped
1/2 tsp red pepper flakes
1 tsp salt
1/2 tsp black pepper
1/4 cup Parmesan cheese (optional)
Instructions
1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened. Add minced garlic and cook until fragrant.
2. Add Italian sausage, breaking it apart with a spoon, and cook until browned. Drain excess grease.
3. Stir in sliced bell peppers and cook for 3–4 minutes. Pour in white wine and let it simmer to reduce alcohol.
4. Add crushed tomatoes, red pepper flakes, salt, and black pepper. Simmer on low for 10–15 minutes.
5. Meanwhile, cook pappardelle pasta in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
6. Toss pasta into the sauce, adding pasta water as needed to loosen. Stir in fresh basil. Top with Parmesan if desired.
7. Serve hot and enjoy!
Notes
Use spicy or mild sausage depending on your heat preference.
Add a splash of cream for a richer sauce.
Fresh basil should be added at the end for maximum flavor.
