Description

Jam Donut Focaccia is a soft, fluffy sweet focaccia baked with jam pockets and finished with a buttery sugar topping for that classic jelly donut flavor. This easy sweet bread recipe uses simple pantry ingredients and makes a bakery style treat that’s perfect for brunch, dessert, or an afternoon coffee break.


Ingredients

2 1/4 tsp active dry yeast

1 cup warm milk

1/4 cup granulated sugar

3 1/2 cups all purpose flour

1 tsp fine salt

2 large eggs

1/4 cup unsalted butter, melted (for the dough)

3/4 cup strawberry or raspberry jam (thick jam preferred)

2 tbsp unsalted butter, melted (for brushing after baking)

1/3 cup granulated sugar (for topping)


Instructions

1. Warm the milk until it feels warm but not hot (about 105–110°F). Stir in 1 tbsp of the sugar, then sprinkle the yeast on top. Let it sit 5–10 minutes until foamy.

2. In a large bowl, mix flour, remaining sugar, and salt. Add the foamy yeast mixture, eggs, and melted butter for the dough.

3. Mix until a soft dough forms, then knead 8–10 minutes until smooth and elastic.

4. Place dough in a lightly greased bowl, cover, and let rise until doubled, about 60–90 minutes.

5. Grease a 9×13 inch pan. Press dough into the pan gently. Cover and let rise until puffy, about 30–45 minutes.

6. Preheat oven to 350°F. Dimple the dough all over with oiled fingertips. Spoon jam into the dimples in small pockets.

7. Bake 25–30 minutes until golden and cooked through.

8. While warm, brush with melted butter (topping butter) and sprinkle generously with granulated sugar (topping sugar). Cool 10–15 minutes before slicing.

Notes

Use thick jam or preserves so it stays in pockets instead of melting into the dough.

If your kitchen is cool, let the dough rise in the oven with the light on for a steadier proof.

For the best texture, serve warm the same day, and rewarm leftover slices for a few seconds before eating.
