This Jamaican brown stew chicken recipe delivers tender meat, bold savory flavor, and a glossy sauce that pairs perfectly with rice, plantains, or potatoes. It is a satisfying dinner option packed with protein and traditional island flavor.
Ingredients
2 pounds chicken pieces
2 tablespoons vegetable oil
1 tablespoon brown sugar
1 medium onion sliced
1 bell pepper sliced
4 cloves garlic minced
2 tablespoons soy sauce
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon fresh thyme leaves
1 cup chicken broth
Instructions
1. Season the chicken with salt, black pepper, garlic, thyme, and soy sauce, then allow it to rest for at least 30 minutes.
2. Heat vegetable oil in a large pot over medium heat and add brown sugar, letting it melt and darken slightly.
3. Carefully add the chicken pieces and brown them on all sides until deeply colored, then remove and set aside.
4. In the same pot, add onion, bell pepper, and garlic, cooking until softened and fragrant.
5. Return the chicken to the pot, pour in chicken broth, and add remaining thyme.
6. Cover and simmer until the chicken is tender and the sauce has thickened.
7. Taste and adjust seasoning before serving hot.
Notes
Allowing the chicken to marinate longer will deepen the flavor.
Do not rush the browning step as this builds the signature color and taste.
The sauce will continue to thicken slightly as it rests.
