Ingredients
1 cup unsalted butter
1 cup granulated sugar
1 cup brown sugar
1 cup creamy peanut butter
2 large eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
Instructions
1. Cream the butters and sugars: In a large mixing bowl, cream together the unsalted butter, granulated sugar, brown sugar, and peanut butter until the mixture is smooth and fluffy.
2. Add eggs and vanilla: Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. Stir in the vanilla extract.
3. Combine the dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add to the wet mixture, stirring until just combined.
4. Scoop and shape: Roll the dough into tablespoon-sized balls, place on a parchment-lined baking sheet, and press each with a fork in a crisscross pattern.
5. Bake to perfection: Bake at 350°F (175°C) for 10–12 minutes or until the edges are lightly golden. Cool on the sheet for a few minutes, then transfer to a wire rack.
Notes
These cookies can be frozen for up to 3 months with parchment between layers.
