Ingredients
8 large eggs
1 cup whole milk
1 pound Italian sausage (sweet or spicy)
1 cup diced bell peppers (red and green)
1/2 cup diced onion
1 cup shredded cheddar cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Preheat oven to 375°F and grease a 9-inch pie dish.
2. Heat olive oil in a skillet over medium heat.
3. Cook sausage, breaking it up until browned.
4. Add bell peppers and onions, sauté until soft.
5. In a large bowl, whisk eggs, milk, salt, and pepper.
6. Stir in shredded cheese.
7. Add cooked sausage and veggies to the greased dish.
8. Pour the egg mixture over the top and distribute evenly.
9. Bake uncovered for 30–35 minutes until center is set.
10. Let cool 5–10 minutes before slicing and serving.
Notes
You can substitute sausage with turkey sausage or plant-based alternatives.
For a cheesy twist, use a blend of cheddar and mozzarella.
