Ingredients
4 lamb chops
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon olive oil
2 tablespoons butter
4 garlic cloves, minced
1 sprig fresh rosemary
2 sprigs fresh thyme
Instructions
1. Take lamb chops out of the fridge and bring to room temperature for 20 minutes. Pat dry with paper towels.
2. Season both sides of the lamb chops generously with salt and black pepper.
3. Heat olive oil in a large skillet over medium-high heat.
4. Sear lamb chops for 3 to 4 minutes per side until golden brown and crusted.
5. Reduce heat to medium and add butter, minced garlic, rosemary, and thyme to the pan.
6. Baste the chops with garlic butter using a spoon and let cook 1 to 2 minutes more.
7. Transfer chops to a plate and rest for 5 minutes.
8. Spoon more garlic butter over before serving.
