Ingredients
6 cloves garlic minced
3 tablespoons lime juice fresh
2 tablespoons olive oil
2 teaspoons ground cumin
2 teaspoons smoked paprika
1 tablespoon soy sauce
1 whole chicken about 4–5 lbs
Instructions
1. In a bowl, whisk together minced garlic, freshly squeezed lime juice, olive oil, cumin, smoked paprika, and soy sauce until smooth and fragrant.
2. Pat the chicken dry with paper towels to remove excess moisture. Place it on a cutting board or in a roasting pan and loosen the skin over the breasts and legs.
3. Rub the marinade all over the chicken, including under the skin and inside the cavity. Cover and refrigerate for at least 4 hours, ideally overnight.
4. Preheat oven to 425°F (220°C). Place chicken breast-side up in a roasting pan and roast for 1 hour to 1 hour 15 minutes, or until internal temperature reaches 165°F and skin is golden and crisp.
5. Remove from oven and rest for 10–15 minutes before carving. Serve warm.
