Description

These Keto Crispy Reuben Roll-Ups are a delicious low-carb twist on the classic deli favorite. Made with baked cheese instead of bread, they’re packed with sliced corned beef, sauerkraut, and creamy Thousand Island dressing. Perfect for keto lunches, low-carb snacks, or easy weeknight dinners. Ingredients

6 slices Swiss cheese

6 slices corned beef

1/2 cup sauerkraut (squeezed dry)

3 tablespoons Thousand Island dressing

6 dill pickle spears (optional)


Instructions

1. Preheat oven to 375°F and line a baking sheet with parchment paper.

2. Place Swiss cheese slices in rows on the sheet, spaced apart.

3. Bake for 6–8 minutes until edges are bubbling and golden.

4. Remove from oven and place a slice of corned beef and a spoonful of sauerkraut on one end of each slice.

5. Drizzle a small amount of Thousand Island dressing over the filling.

6. Quickly roll each cheese slice around the filling while it’s still pliable.

7. Let them cool seam-side down to set.

8. Serve warm with extra dressing or pickles on the side.

Notes

Let the cheese cool just slightly before rolling to avoid tearing.

Be sure to drain the sauerkraut well to keep the roll-ups crispy.

Use parchment paper, not foil, to prevent sticking.
