Ingredients

3 cups cooked shredded chicken

12 corn tortillas

1 can cream of chicken soup

1 can cream of mushroom soup

1 can (10 oz) diced tomatoes with green chilies

1 medium onion, diced

1 green bell pepper, diced

2 cloves garlic, minced

2 cups shredded cheddar cheese

1 tablespoon olive oil or butter

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. In a large skillet, heat olive oil over medium heat. Sauté the diced onion and green bell pepper for 5 minutes until soft. Add garlic and cook for 1 more minute.

2. Stir in the cream of chicken soup, cream of mushroom soup, and diced tomatoes with green chilies. Simmer on low heat for 3-4 minutes.

3. Preheat the oven to 350°F. Lightly grease a 9×13-inch baking dish.

4. Toast or lightly fry the corn tortillas to prevent sogginess. Layer half the tortillas in the baking dish.

5. Add half the shredded chicken, half the soup mixture, and half the cheese.

6. Repeat layers: tortillas, chicken, soup mixture, and finish with cheese.

7. Cover with foil and bake for 25 minutes. Remove foil and bake uncovered for 10–15 minutes until bubbly and golden.

8. Let rest for 5–10 minutes before serving to firm up. Garnish with fresh cilantro or sour cream if desired.

Notes

This casserole freezes wonderfully—wrap tightly and freeze for up to 3 months.

If you prefer a spicier version, use hot Rotel or add cayenne pepper to the sauce.

You can substitute turkey or ground chicken if you prefer.
