These Korean BBQ Meatball Rice Bowls combine juicy homemade meatballs glazed in sweet and spicy gochujang sauce with fluffy rice and crunchy veggies. A perfect weeknight dinner, packed with flavor and easy to customize. Great for meal prep, high-protein, and Korean-inspired comfort food.
Ingredients
1 lb ground beef
1 lb ground pork
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
3 green onions, finely chopped
2 tablespoons soy sauce
1 tablespoon sesame oil
1/2 cup breadcrumbs
1 large egg
1/4 cup brown sugar
2 tablespoons gochujang
1 tablespoon rice vinegar
1 teaspoon sesame oil (for sauce)
3 cups cooked rice
1 cucumber, thinly sliced
1 cup shredded carrots
1 tablespoon sesame seeds
Instructions
1. In a large bowl, mix ground beef, ground pork, garlic, ginger, green onions, soy sauce, sesame oil, breadcrumbs, and egg until just combined.
2. Roll into 1-inch balls and place on a parchment-lined baking sheet.
3. Bake at 400°F for 18–20 minutes, until golden and cooked through.
4. Meanwhile, in a saucepan, simmer soy sauce, brown sugar, gochujang, rice vinegar, and sesame oil over medium heat for about 5 minutes until slightly thickened.
5. Toss baked meatballs in the sauce and let sit for a few minutes to absorb the glaze.
6. Assemble bowls with hot rice, meatballs, cucumber slices, shredded carrots, and a sprinkle of sesame seeds.
7. Optional: Add soft-boiled eggs or kimchi for extra flavor.
Notes
Use a 50/50 mix of beef and pork for best texture and flavor.
Don’t overmix the meatball mixture to keep them tender.
For meal prep, store rice and toppings separately from the meatballs and sauce.
