This hearty Layered Burrito Casserole is a delicious Tex-Mex dinner recipe featuring layers of ground beef, refried beans, cheese, and tortillas baked to perfection. Easy to make, perfect for meal prep, and full of bold flavor!
Ingredients
1 pound ground beef
1 packet taco seasoning
1 can (16 ounces) refried beans
6 medium flour tortillas
2 cups shredded cheese
1 1/2 cups salsa or enchilada sauce
optional toppings: sour cream, cilantro, diced tomatoes, jalapeños
Instructions
1. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat, stir in taco seasoning and a splash of water, and simmer for a couple of minutes.
2. In a greased baking dish, spread a thin layer of salsa or enchilada sauce. Place a tortilla, spread with refried beans, then beef, then cheese. Repeat layers, finishing with a tortilla topped with sauce and cheese.
3. Cover with foil and bake at 350°F (175°C) for 20 minutes. Remove foil and bake another 10 minutes until bubbly and golden.
4. Let cool slightly before slicing. Add your favorite toppings and serve warm.
Notes
This recipe can be made ahead and refrigerated or frozen for later.
