Ingredients
2 pounds potatoes
4 garlic cloves, minced
1/3 cup fresh lemon juice
1 tablespoon lemon zest
1/3 cup olive oil
1 cup vegetable broth
1 tablespoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Preheat oven to 400°F. Peel and cut potatoes into thick wedges.
2. In a large bowl, whisk together olive oil, lemon juice, zest, garlic, oregano, salt, pepper, and broth.
3. Toss potatoes in the marinade until coated.
4. Arrange potatoes flat-side down in a single layer in a roasting pan.
5. Roast for 40 minutes, flip, then pour remaining marinade over and roast another 20–30 minutes.
6. Garnish with chopped parsley and serve hot.
Notes
Use Yukon Gold or russet potatoes for the best texture.
For crispier results, don’t overcrowd the pan.
Reheat leftovers in the oven or air fryer to maintain texture.
