Ingredients

1 lb chicken breast

2 tsp lemon pepper seasoning

1 tsp garlic powder

2 tbsp olive oil

12 oz rotini pasta

2 tbsp butter

1 ½ cups heavy cream

1 cup grated Parmesan cheese

½ cup chopped roasted red peppers

1 tbsp Cajun seasoning

¼ tsp salt

¼ tsp black pepper


Instructions

1. Cut chicken into bite-sized pieces and season with lemon pepper, garlic powder, and a bit of salt.

2. In a skillet, heat olive oil over medium-high and sear the chicken until golden and cooked through. Set aside.

3. Cook rotini pasta in salted boiling water until al dente. Drain and set aside.

4. In a large saucepan, melt butter. Add chopped roasted red peppers and cook for 2-3 minutes.

5. Stir in heavy cream and bring to a gentle simmer.

6. Add Cajun seasoning and Parmesan cheese, stir until cheese melts and sauce thickens.

7. Season sauce with salt and black pepper.

8. Mix in cooked pasta and fold in chicken bites.

9. Stir until combined and heated through.

10. Serve hot, optionally topped with more Parmesan or chopped herbs.

Notes

Use rotini pasta to trap the Alfredo sauce in every bite.

Adjust Cajun seasoning to taste if you prefer more or less heat.

Add a splash of milk or cream when reheating leftovers to revive the sauce.
