Ingredients
1 cup granulated sugar
3 tablespoons cornstarch
1 cup cold water
3 large egg yolks

1 pre-baked 9-inch pie crust
Instructions
1. In a saucepan, combine sugar and cornstarch. Gradually whisk in cold water until smooth.
2. Place over medium heat, stirring constantly until thickened and bubbly. Reduce heat and cook 2 more minutes.
3. In a bowl, whisk the egg yolks. Slowly add a bit of the hot mixture to temper, then return all to the saucepan. Cook for 2 more minutes.
4. Remove from heat. Stir in lemon juice, zest, and butter until smooth. Let it cool slightly.
5. Pour lemon mixture into the pre-baked crust. Chill for 1 hour.
6. In a separate bowl, beat the softened cream cheese until smooth.
7. Fold in the whipped topping and optional zest or lemon juice.
8. Spread the topping gently over the chilled lemon filling.
9. Refrigerate for several hours or overnight until set.
