Description

These Loaded Scalloped Potatoes are creamy, cheesy, and topped with crispy bacon and green onions for the ultimate comfort food side dish. Perfect for holidays, potlucks, or family dinners, this easy scalloped potatoes recipe is sure to impress. Great with ham, steak, or BBQ and loved by kids and adults alike.


Ingredients

3 pounds russet potatoes

4 tablespoons butter

4 tablespoons all-purpose flour

2 cups milk

1 cup heavy cream

2 cups shredded cheddar cheese

8 slices cooked bacon, crumbled

1/3 cup sliced green onions

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Peel and slice the potatoes into 1/8-inch thick rounds. Set aside.

2. In a medium saucepan, melt butter over medium heat. Stir in the flour and cook for 1 minute, whisking constantly.

3. Slowly whisk in milk and heavy cream. Continue stirring until sauce thickens.

4. Remove from heat and stir in 1 1/2 cups of shredded cheese until melted. Reserve the remaining 1/2 cup for topping.

5. Preheat oven to 375°F and grease a 9×13-inch baking dish.

6. Layer half of the sliced potatoes into the dish. Pour over half of the cheese sauce, then sprinkle with half of the bacon and green onions.

7. Repeat with remaining potatoes, sauce, bacon, and onions. Top with reserved cheese.

8. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 20–25 minutes, until bubbly and golden.

9. Let rest for 10 minutes before serving to allow the sauce to set.

Notes

Use a mandoline for even potato slices and quicker prep.

Don’t skip the resting time after baking—it helps the sauce thicken.

Yukon Golds can be substituted for a creamier potato texture.
