Ingredients
2 chicken breasts
8 oz rotini pasta
1/2 cup sun-dried tomatoes (chopped)
1/2 cup grated parmesan cheese
1/2 cup mayonnaise
1/4 cup sour cream
2 cloves garlic (minced)
1 tsp Italian seasoning
1/4 tsp red pepper flakes
Salt and pepper to taste
1 tbsp olive oil
Instructions
1. Boil a large pot of salted water and cook rotini pasta until al dente. Drain and rinse under cold water to cool.
2. Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a skillet and sear chicken on both sides until fully cooked. Let rest, then dice.
3. In a mixing bowl, stir together mayonnaise, sour cream, minced garlic, parmesan cheese, and red pepper flakes until smooth.
4. Combine cooled pasta, chopped sun-dried tomatoes, diced chicken, and dressing in a large bowl. Toss until evenly coated.
5. Refrigerate for at least 30 minutes to allow flavors to meld before serving.
Notes
You can swap sun-dried tomatoes for cherry tomatoes for a fresher feel.
If pasta salad feels dry after refrigeration, stir in a tablespoon of milk or more mayo.
