Ingredients
2 chicken breasts
2 tablespoons olive oil
3 garlic cloves minced
0.5 cup sun-dried tomatoes chopped
1 cup chicken broth
1 cup heavy cream
0.75 cup grated Parmesan cheese
1 teaspoon Italian seasoning
0.25 teaspoon red pepper flakes
12 ounces pasta penne or rigatoni
0.5 teaspoon salt
0.25 teaspoon black pepper
Instructions
1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden and fully cooked. Remove from pan and set aside to slice.
2. In the same skillet, sauté garlic until fragrant. Add sun-dried tomatoes and cook for 2 minutes until softened.
3. Pour in the chicken broth to deglaze the pan. Stir in heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Simmer until the sauce thickens slightly.
4. Meanwhile, cook pasta in salted boiling water until al dente. Reserve 0.5 cup of the pasta water and drain the rest.
5. Slice the cooked chicken and return it to the skillet with the sauce. Add the cooked pasta and toss to coat. Use reserved pasta water to thin the sauce if needed.
6. Taste and adjust seasoning with extra salt or pepper. Serve hot, topped with extra Parmesan and a pinch of red pepper flakes if desired.
Notes
Let the sauce simmer gently to avoid curdling the cream.
Use freshly grated Parmesan for the smoothest, richest sauce.
Reserve pasta water before draining in case you need to loosen the sauce.
