Ingredients

2 tablespoons olive oil

4 cloves garlic, minced

1 medium yellow onion, diced

1.5 pounds boneless skinless chicken breasts

5 cups chicken broth

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

0.75 cup grated parmesan cheese

1.5 teaspoons Italian seasoning

0.25 teaspoon crushed red pepper (optional)

Salt, to taste

Black pepper, to taste

2 cups fresh spinach


Instructions

1. Heat olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 3 to 4 minutes.

2. Stir in the garlic and cook until fragrant, about 30 seconds.

3. Add the chicken breasts and chicken broth. Bring to a simmer and cook until chicken is cooked through, about 15 minutes.

4. Remove the chicken and shred it with two forks. Return shredded chicken to the pot.

5. Stir in sun-dried tomatoes, Italian seasoning, crushed red pepper (if using), salt, and black pepper. Let simmer for 10 minutes.

6. Reduce heat to low. Add heavy cream and parmesan, stirring until melted and fully combined.

7. Stir in fresh spinach and cook just until wilted. Adjust seasoning to taste and serve warm.

Notes

This soup freezes well if you add the cream after reheating.

Rotisserie chicken is a great time-saving swap.

You can substitute kale for spinach if you prefer a heartier green.
