Ingredients
1 tablespoon olive oil
4 boneless skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
3 cloves garlic minced
1 2 cup sun-dried tomatoes chopped
1 2 cup chicken broth
1 cup heavy cream
1 2 cup grated parmesan cheese
1 teaspoon Italian seasoning
1 4 teaspoon red pepper flakes
Instructions
1. Pat the chicken breasts dry and season them with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat and sear the chicken for 5 minutes per side until golden. Remove and set aside.
3. In the same skillet, reduce heat and cook the minced garlic for 1 minute.
4. Add chopped sun-dried tomatoes and cook for another minute.
5. Pour in chicken broth to deglaze the pan, scraping up browned bits.
6. Stir in heavy cream, parmesan, Italian seasoning, and red pepper flakes. Simmer for 3 to 4 minutes.
7. Return chicken to the skillet and simmer for 10 minutes until cooked through.
8. Serve hot with plenty of sauce over pasta, potatoes, or rice. Garnish if desired.
Notes
Use freshly grated parmesan for the best melting texture.
You can substitute chicken thighs if preferred.
Add spinach or mushrooms to the sauce for extra nutrition and flavor.
