Description

Ingredients

1 medium head green cabbage

3 tablespoons olive oil

4 garlic cloves, minced

1 ½ cups vegetable or chicken broth

1 tablespoon Dijon mustard

2 tablespoons apple cider vinegar

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional)


Instructions

1. Preheat your oven to 350°F. Remove any wilted outer leaves from the cabbage and slice it into thick 1 to 1.5-inch rounds. Arrange the slices in a single layer in a baking dish or sheet pan.

2. In a bowl, whisk together olive oil, minced garlic, broth, Dijon mustard, and apple cider vinegar. Season with salt, pepper, and red pepper flakes if using.

3. Pour the sauce evenly over the cabbage rounds in the pan. Cover the pan tightly with foil to trap steam during the first roast.

4. Roast for 40 minutes. Then, remove the foil and continue roasting uncovered for another 25 to 30 minutes until cabbage is deeply golden and tender.

5. Spoon the pan juices over the top and serve warm.

Notes

The thicker your cabbage slices, the more buttery and soft they turn out.

You can swap apple cider vinegar with white wine vinegar in a pinch.

For a spicier twist, double the red pepper flakes or add a pinch of cayenne.
