Description
This Mashed Potato Casserole is a creamy, cheesy baked potato side dish made with russet potatoes, butter, sour cream, and cheddar cheese. Perfect for holidays, Sunday dinners, or make ahead meals, this easy mashed potato bake is rich, fluffy, and golden on top.
Ingredients
2 ½ pounds russet potatoes
½ cup unsalted butter
4 ounces cream cheese
½ cup sour cream
½ cup whole milk
1 ½ cups shredded cheddar cheese
1 teaspoon garlic powder
1 ½ teaspoons salt
½ teaspoon black pepper
2 tablespoons chopped chives
Instructions
1. Peel and cut the russet potatoes into evenly sized chunks. Place them in a large pot and cover with cold salted water. Bring to a boil and cook until fork tender, about 15 to 20 minutes. Drain well.
2. Return the hot potatoes to the pot. Add butter, cream cheese, sour cream, and warm milk. Mash until smooth and creamy.
3. Stir in garlic powder, salt, and black pepper. Taste and adjust seasoning if needed.
4. Preheat oven to 375 degrees Fahrenheit. Spread the mashed potato mixture into a greased 9×13 inch baking dish.
5. Sprinkle shredded cheddar cheese evenly over the top.
6. Bake for 20 to 25 minutes until heated through and cheese is melted and lightly golden.
7. Garnish with chopped chives before serving.
Notes
For extra flavor, mix in cooked crumbled bacon before baking.
You can assemble the casserole up to 24 hours in advance and refrigerate before baking.
For a crispier top, broil for 2 to 3 minutes at the end while watching carefully.
