Ingredients
1 pound ground beef
1 large egg
1 cup breadcrumbs
1/3 cup milk
1/2 cup onion, finely chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
3 cups mashed potatoes
2 tablespoons butter
1 1/2 cups shredded cheddar cheese (or your favorite melting cheese)
Instructions
1. In a large bowl, mix together the ground beef, egg, breadcrumbs, milk, onion, garlic, salt, and pepper until just combined.
2. Shape the meat mixture into a loaf and place it in a baking dish.
3. Preheat oven to 375°F. Cover meatloaf with foil and bake for 30 minutes.
4. Meanwhile, prepare mashed potatoes by boiling peeled, chopped potatoes until tender. Drain and mash with butter, adding a bit of milk if needed. Season to taste.
5. Remove meatloaf from the oven. Spread the mashed potatoes evenly over the top.
6. Sprinkle shredded cheese over the mashed potato layer.
7. Return to oven uncovered for 15 minutes or until cheese is melted and bubbly.
8. Let rest for 5 to 10 minutes before slicing and serving.
