Ingredients
1 tablespoon olive oil
1 pound ground beef
1 small red onion, chopped
3 garlic cloves, minced
1 zucchini, chopped
1 bell pepper, chopped
1 cup cherry tomatoes, halved
2 cups spinach
2 tablespoons lemon juice
1 teaspoon dried oregano
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Heat olive oil in a large skillet over medium-high heat.
2. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
3. Push beef to one side and sauté chopped red onion and minced garlic for 2 to 3 minutes until fragrant.
4. Stir in zucchini, bell pepper, and cherry tomatoes. Cook for 5 to 7 minutes until tender-crisp.
5. Add spinach and stir until wilted, about 1 minute.
6. Squeeze lemon juice over the mixture, add oregano, parsley, salt, and pepper. Mix and remove from heat.
