Ingredients
1 pound ground beef
1 can Rotel tomatoes with green chilies (10 oz)
16 ounces Velveeta cheese, cubed
1 cup sour cream
1 packet taco seasoning
1 small onion, finely chopped (optional)
Salt and pepper to taste
Instructions
1. In a large skillet over medium heat, cook ground beef until browned. Drain excess grease.
2. Add taco seasoning and stir to coat the beef, cooking for 1 minute more.
3. Lower the heat and add cubed Velveeta cheese. Stir until fully melted and smooth.
4. Stir in Rotel tomatoes (undrained) and mix until heated through.
5. Remove from heat and fold in sour cream until fully combined.
6. Taste and season with salt and pepper as needed.
7. Serve warm with chips, bread, or veggies.
Notes
Let the dip cool slightly before refrigerating.
You can substitute Velveeta with cream cheese and shredded cheddar.
