This Moist Puerto Rican Beef Stew recipe, also known as Carne Guisada, is a comforting and flavorful dish featuring tender beef simmered in a savory tomato-based sauce with potatoes, carrots, and Puerto Rican seasonings. Ideal for cozy dinners and family meals, this hearty stew pairs perfectly with rice and freezes well for later.
Ingredients
2 pounds beef chuck roast, cubed
2 tablespoons olive oil
1/3 cup sofrito
1/2 cup tomato sauce
2 cups beef broth
1 teaspoon adobo seasoning
1 packet Sazon seasoning
2 bay leaves
1/2 cup pitted green olives
2 large potatoes, peeled and cubed
2 carrots, sliced
Instructions
1. Heat olive oil in a heavy pot over medium-high heat. Season beef with adobo and sear in batches until browned. Remove and set aside.
2. In the same pot, add sofrito and cook until fragrant. Stir in tomato sauce and simmer for 2–3 minutes.
3. Return beef to the pot and pour in beef broth. Add olives, bay leaves, and Sazon. Bring to a boil, then reduce to a simmer. Cover and cook for 1.5 to 2 hours.
4. Add potatoes and carrots. Simmer uncovered for 25–30 minutes until vegetables are tender and stew thickens.
5. Adjust seasoning to taste. Remove bay leaves and serve hot over white rice.
Notes
Use chuck roast for the most tender results.
Make it ahead: flavors deepen overnight in the fridge.
