Ingredients
1 lb ground turkey
4 oz cream cheese, softened
1 cup shredded mozzarella cheese, divided
1 cup shredded cheddar cheese, divided
2 cloves garlic, minced
1 small onion, chopped
1 medium zucchini, chopped
2 cups fresh spinach
1 tablespoon olive oil
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 375 degrees Fahrenheit. Grease a 9ร9 inch baking dish.
2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened.
3. Stir in garlic and cook for about 30 seconds until fragrant.
4. Add ground turkey and cook until browned, breaking it apart as it cooks. Season with salt, pepper, and Italian seasoning.
5. Stir in zucchini and cook 3 to 4 minutes until slightly tender.
6. Add spinach and cook until wilted. Allow excess moisture to cook off.
7. Reduce heat and stir in cream cheese until fully melted and combined.
8. Mix in half of the mozzarella and half of the cheddar until creamy.
9. Transfer mixture to prepared baking dish.
10. Sprinkle remaining mozzarella and cheddar evenly over the top.
11. Bake 20 to 25 minutes until cheese is melted and lightly golden.
12. Let rest 5 minutes before serving.
Notes
For extra flavor, add red pepper flakes or smoked paprika.
Make sure excess moisture from zucchini cooks off to avoid a watery casserole.
Use full fat dairy for best keto results and creamier texture.
