Ingredients

24 chocolate sandwich cookies

5 tablespoons unsalted butter, melted

8 ounces cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1 tub (8 ounces) whipped topping, thawed

1 can (21 ounces) cherry pie filling


Instructions

1. Crush the chocolate sandwich cookies into fine crumbs using a food processor or a sealed bag and rolling pin.

2. Mix the crumbs with melted butter until the texture resembles wet sand.

3. Press the mixture into a 9-inch pie dish evenly across the bottom and sides. Chill while preparing the filling.

4. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each until smooth. Let cool slightly.

5. In a large mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.

6. Add in the melted chocolate and blend until fully incorporated.

7. Fold in the whipped topping gently until the mixture is light and uniform.

8. Spread the chocolate filling evenly into the prepared crust.

9. Top the pie with cherry pie filling, spreading it carefully across the surface.

10. Refrigerate the pie for at least 4 hours or until set. Slice and serve chilled.

Notes

Use a sharp knife to slice through the cherry topping cleanly.

Fresh cherries can be used in place of canned when in season.
