Ingredients
12 graham cracker sheets, crushed
6 tablespoons unsalted butter, melted
16 ounces cream cheese, softened
3/4 cup powdered sugar
1 teaspoon vanilla extract
3/4 cup heavy whipping cream
1/2 cup crushed peppermint or sprinkles (for topping)
1 cup whipped cream (for topping, optional)
Instructions
1. Line a muffin tin with paper liners.
2. Mix graham cracker crumbs with melted butter until combined.
3. Press about 2 tablespoons of the crust mixture into each liner and flatten. Chill in the refrigerator.
4. In a large bowl, beat the cream cheese until smooth.
5. Add powdered sugar and vanilla extract to the cream cheese and mix until combined.
6. In a separate bowl, whip the heavy cream to stiff peaks.
7. Fold the whipped cream into the cream cheese mixture until light and smooth.
8. Spoon filling into each crust-lined muffin cup and smooth the tops.
9. Chill in the fridge for at least 4 hours or overnight.
10. Top with whipped cream, crushed peppermint, or festive sprinkles just before serving.
Notes
Store cheesecakes in the fridge for up to 3 days.
You can use gingersnaps, Oreos, or speculoos instead of graham crackers.
