Ingredients
1 1/2 cups graham cracker crumbs
6 oz cream cheese, softened
1 cup powdered sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon vanilla extract
12 oz white chocolate chips or coating wafers
1 tablespoon coconut oil or shortening (optional)
Instructions
1. In a large bowl, mix together graham cracker crumbs, softened cream cheese, powdered sugar, cinnamon, and vanilla until a soft dough forms.
2. Chill the dough in the refrigerator for at least 30 minutes to firm it up.
3. Scoop and roll the chilled dough into 1-inch balls. Place them on a parchment-lined tray.
4. Melt the white chocolate with coconut oil or shortening if using, stirring until smooth.
5. Dip each truffle into the melted white chocolate, letting excess drip off, then place back on the tray.
6. Let the coating set completely at room temperature or chill in the fridge.
