Description

These No Sugar Cottage Cheese Carrot Cake Bars are soft, protein-packed treats naturally sweetened with banana or dates. A healthy snack or dessert, this no sugar carrot cake recipe blends cottage cheese, oats, and spices into perfect meal prep bars. Ingredients

1 cup shredded carrots

1 cup cottage cheese

1 cup rolled oats

2 large eggs

1 medium banana (or 1/2 cup soaked dates)

1 teaspoon cinnamon

1 teaspoon baking powder

1 teaspoon vanilla extract

1/4 teaspoon salt


Instructions

1. Preheat oven to 350°F and line or grease an 8×8 baking dish.

2. In a blender, combine cottage cheese, banana (or soaked dates), eggs, vanilla, and salt. Blend until smooth.

3. Add oats, cinnamon, and baking powder. Pulse until combined.

4. Stir in shredded carrots by hand to avoid over-blending.

5. Pour mixture into prepared dish and spread evenly.

6. Bake for 25–30 minutes or until golden and a toothpick comes out clean.

7. Cool completely before slicing into bars.

8. Store in an airtight container in the fridge for up to 5 days or freeze for later.

Notes

Use fresh shredded carrots for extra moisture.

You can use oat flour instead of whole oats if you prefer a smoother texture.
