Ingredients
3 tablespoons butter or bacon grease
4 medium Yukon Gold potatoes, diced
1 medium onion, chopped
2 cloves garlic, minced
1 small head of green cabbage, shredded
1 teaspoon salt
1/2 teaspoon black pepper
1 cup cooked bacon or smoked sausage (optional)
Instructions
1. Heat a large skillet over medium heat and add the butter or bacon grease.
2. Add diced potatoes in a single layer and cook for 8โ10 minutes until golden and starting to crisp.
3. Stir in chopped onion and minced garlic. Cook for another 5 minutes until soft and fragrant.
4. Add the shredded cabbage to the skillet. Cook for 10โ12 minutes, stirring occasionally, until tender and lightly browned.
5. If using, add in cooked sausage or bacon. Mix well and cook for 2โ3 more minutes to blend the flavors.
6. Season with salt and pepper to taste. Serve hot.
Notes
Let potatoes cook undisturbed at first for a crispy crust.
Add cabbage in batches if your skillet is full; it will cook down.
Use red potatoes or Russets if Yukon Golds are not available.
