Description

Ingredients

3 tablespoons butter or bacon grease

4 medium Yukon Gold potatoes, diced

1 medium onion, chopped

2 cloves garlic, minced

1 small head of green cabbage, shredded

1 teaspoon salt

1/2 teaspoon black pepper

1 cup cooked bacon or smoked sausage (optional)


Instructions

1. Heat a large skillet over medium heat and add the butter or bacon grease.

2. Add diced potatoes in a single layer and cook for 8โ€“10 minutes until golden and starting to crisp.

3. Stir in chopped onion and minced garlic. Cook for another 5 minutes until soft and fragrant.

4. Add the shredded cabbage to the skillet. Cook for 10โ€“12 minutes, stirring occasionally, until tender and lightly browned.

5. If using, add in cooked sausage or bacon. Mix well and cook for 2โ€“3 more minutes to blend the flavors.

6. Season with salt and pepper to taste. Serve hot.

Notes

Let potatoes cook undisturbed at first for a crispy crust.

Add cabbage in batches if your skillet is full; it will cook down.

Use red potatoes or Russets if Yukon Golds are not available.
