Ingredients

For the peach filling:

68 fresh peaches, peeled and sliced (or 4 cups canned/frozen peaches, drained)

¾ cup granulated sugar

1 teaspoon vanilla extract

½ teaspoon cinnamon

1 tablespoon lemon juice

1 tablespoon cornstarch

For the cobbler topping:

1 cup all-purpose flour

¾ cup granulated sugar

1 teaspoon baking powder

¼ teaspoon salt

½ cup (1 stick) unsalted butter, melted

¾ cup milk

½ teaspoon vanilla extract


Instructions

  1. Preheat & Prepare Peaches
    Preheat the oven to 375°F (190°C). In a large mixing bowl, combine peaches, sugar, vanilla extract, cinnamon, lemon juice, and cornstarch. Let the mixture sit for 10 minutes.
  2. Bake the Peach Filling
    Transfer the peach mixture to a greased 9×13-inch baking dish and spread evenly. Bake for 10 minutes to soften the peaches.
  3. Prepare the Cobbler Batter
    In a medium bowl, whisk together flour, sugar, baking powder, and salt. Add melted butter, milk, and vanilla extract. Stir until smooth.
