Ingredients

4 Italian sausages or sausage of choice

3 bell peppers, mixed colors, sliced

1 1/2 pounds Yukon gold potatoes, chopped

1 large red onion, sliced

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Preheat your oven to 425°F. Line a large baking sheet with parchment paper or foil.

2. Chop the potatoes into chunks, and slice the peppers and red onion.

3. Add the veggies to the baking sheet, drizzle with olive oil, and season with garlic powder, oregano, salt, and pepper. Toss to coat.

4. Nestle the sausages between the vegetables. Slice them lengthwise if needed for quicker cooking.

5. Roast for 35–40 minutes, flipping the sausages and stirring the veggies halfway through.
