Ingredients
1 lb steak (sirloin, ribeye, or NY strip), cut into bite-sized pieces
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
8 oz pasta (fettuccine or egg noodles)
3 tbsp butter
4 cloves garlic, minced
1/2 cup heavy cream or milk
1/2 cup grated Parmesan cheese
1 tbsp chopped parsley (optional)
Instructions
1. Cut steak into bite-sized pieces and season with salt and pepper.
2. Heat olive oil in a large skillet over high heat. Sear steak in batches, cooking 1–2 minutes per side until browned but still tender. Remove and set aside.
3. In the same skillet, add water or broth and bring to a boil. Cook the pasta until tender, leaving a little pasta water in the skillet.
4. Reduce heat to medium-low, add butter and minced garlic. Sauté until fragrant.
5. Stir in heavy cream or milk and Parmesan cheese. Mix until sauce thickens and coats the noodles.
6. Return steak bites to the pan and toss to combine with the cheesy garlic noodles.
7. Garnish with parsley if using, and serve hot.
Notes
Make sure the steak is dry before searing for the best crust.
Don’t overcrowd the pan while searing the steak. Cook in batches.
If sauce is too thick, add a splash of reserved pasta water to loosen it.
