Ingredients

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

2 tablespoons taco seasoning

1 can (15 ounces) tomato sauce

2 cups beef broth

2 cups uncooked rotini pasta

1/2 cup sour cream

1 1/2 cups shredded cheddar cheese

Salt and pepper to taste

Optional toppings: diced tomatoes, chopped green onions, avocado, tortilla chips


Instructions

1. In a large skillet over medium-high heat, cook the ground beef and diced onion until browned and softened. Drain any excess grease.

2. Add the minced garlic and taco seasoning, stir for 1 minute until fragrant.

3. Pour in tomato sauce and beef broth, then stir in uncooked pasta. Bring to a boil.

4. Reduce heat to low, cover, and let simmer for 12–15 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.

5. Stir in sour cream and shredded cheddar cheese until smooth and creamy. Season with salt and pepper.

6. Serve hot with optional toppings like diced tomatoes, green onions, avocado, or crushed tortilla chips.

Notes

Use lean ground beef for less grease and better texture.

Add a splash of broth when reheating to maintain creaminess.

For extra flavor, mix in corn or black beans before simmering.
