Ingredients
1 tablespoon butter
1 medium yellow onion, diced
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
0.25 cup all-purpose flour
6 cups low sodium chicken broth
1 pound chicken breasts or thighs
0.5 cup heavy cream
0.5 teaspoon dried thyme
Salt and pepper to taste
For the Dumplings
1 cup all-purpose flour
2 teaspoons baking powder
0.5 teaspoon salt
0.5 cup milk
Instructions
1. In a large pot over medium heat, melt the butter. Add onion, carrots, and celery. Cook until soft, about 5–7 minutes. Stir in the garlic and cook for 1 more minute.
2. Sprinkle the flour over the vegetables. Stir continuously for 2 minutes to form a roux. Slowly add chicken broth while whisking to avoid lumps.
3. Add chicken breasts and thyme. Simmer uncovered for 15–20 minutes until chicken is fully cooked. Remove chicken, shred with forks, and return it to the pot.
4. In a bowl, mix 1 cup flour, baking powder, salt, and milk to form a sticky dough for the dumplings.
5. Drop spoonfuls of dough into the simmering soup. Cover and let cook for 15 minutes. Do not lift the lid to keep steam in.
6. Add heavy cream, season with salt and pepper, and stir gently. Let simmer another 5 minutes before serving.
