Ingredients
2 chicken breasts
2 tablespoons olive oil
4 cloves garlic, minced
2 ½ cups chicken broth
1 ½ cups heavy cream
12 ounces penne pasta
1 cup parmesan cheese, grated
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons fresh parsley (optional)
Instructions
1. Heat olive oil in a large skillet or deep pan over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Cook until browned and fully cooked, then set aside.
2. In the same pan, reduce heat and add minced garlic. Sauté for about 30 seconds until fragrant.
3. Pour in chicken broth and heavy cream. Stir and scrape up any bits from the bottom of the pan. Let simmer for 3-5 minutes.
4. Stir in penne pasta. Cover and cook over medium heat, stirring occasionally, until pasta is al dente and most liquid is absorbed.
5. Reduce heat to low. Add parmesan cheese and stir until melted and combined.
6. Return chicken to the pan and mix until coated in sauce.
7. Garnish with chopped parsley before serving if desired.
Notes
Use rotisserie chicken to save time.
Add spinach, mushrooms, or sun-dried tomatoes for variation.
Reheat with a splash of milk to maintain creaminess.
