This One Pot Lemon Herb Chicken Rice recipe is a comforting, easy dinner idea with juicy chicken, fluffy rice, fresh herbs, and lemon. Perfect for busy weeknights, healthy and delicious one-pan meal for the whole family.
Ingredients
4 chicken thighs 1 cup long-grain white rice 2 cups chicken broth 1 lemon juice and zest 3 cloves garlic minced 2 tablespoons fresh parsley chopped 1 teaspoon fresh thyme leaves 1 tablespoon olive oil salt and pepper to taste
Instructions
1. Heat a large skillet or Dutch oven over medium-high heat and add olive oil. Season chicken with salt and pepper and sear skin-side down until golden, about 4-5 minutes per side. Remove and set aside. In the same pot, sauté minced garlic for 30 seconds. Add uncooked rice and toast slightly for 1-2 minutes. Pour in chicken broth, lemon juice and zest, thyme, and adjust salt and pepper. Stir well. Nestle chicken back into the pot, skin-side up. Bring to a simmer, cover, reduce heat to low, and cook for 20-25 minutes until rice is tender and chicken cooked through. Remove from heat, let rest for 5 minutes, garnish with parsley and extra lemon zest.
Notes
Use long-grain or jasmine rice for best texture. Let the dish rest covered after cooking for fluffier rice. For more lemon flavor, add extra zest just before serving.
