A family favorite that’s quick, easy, and packed with bold flavors!


Ingredients

12 oz (340g) smoked sausage, sliced

2 cups rotini or penne pasta

1 tablespoon olive oil

1 small onion, chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

2 cups chicken broth

1/2 cup heavy cream

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

1 cup shredded mozzarella or cheddar cheese

2 tablespoons grated Parmesan cheese

Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot or deep skillet over medium heat. Add the sliced smoked sausage and cook until browned, about 3–4 minutes.
  2. Stir in the chopped onion and minced garlic, cooking for another 2 minutes until fragrant.
  3. Pour in the diced tomatoes (with juices), chicken broth, and heavy cream. Stir well to combine.
  4. Add the Italian seasoning, red pepper flakes (if using), salt, and black pepper. Bring the mixture to a gentle simmer.
  5. Add the pasta to the pot, ensuring it’s submerged in the liquid. Cover and cook for 12–15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
  6. Reduce the heat to low and stir in the shredded mozzarella or cheddar cheese until melted and creamy.
  7. Sprinkle Parmesan cheese over the top and mix gently.
  8. Remove from heat, garnish with fresh parsley, and let it sit for a couple of minutes before serving.
