Ingredients

2 cups all purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup unsalted butter softened

2 large eggs

1/2 cup fresh orange juice

1 tablespoon orange zest

1/2 cup milk

1 1/2 cups fresh or dried cranberries

1 cup powdered sugar

2 to 3 tablespoons fresh orange juice for glaze


Instructions

1. Preheat the oven to 350 degrees Fahrenheit and grease a 9ร—5 inch loaf pan. Line with parchment paper for easy removal.

2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.

4. Add the eggs one at a time, mixing well after each addition.

5. Stir in the fresh orange juice and orange zest until fully combined.

6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix just until combined.

7. Gently fold in the cranberries, distributing them evenly throughout the batter.

8. Pour the batter into the prepared loaf pan and smooth the top.

9. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.

10. Allow the bread to cool completely in the pan before removing.

11. Whisk together the powdered sugar and fresh orange juice for the glaze and drizzle over the cooled bread before slicing.

Notes

For extra citrus flavor, add an additional teaspoon of orange zest to the batter.

If using frozen cranberries, add them directly to the batter without thawing.

Do not overmix the batter, as this can result in a dense loaf instead of a tender crumb.
