Ingredients
1 box yellow cake mix
4 large eggs
1/2 cup vegetable oil
1 can (11 oz) mandarin oranges with juice
1 tub (8 oz) Cool Whip
1 package (3.4 oz) vanilla instant pudding mix
1 can (20 oz) crushed pineapple with juice
Instructions
1. Preheat your oven to 350°F and grease a 9×13-inch baking dish.
2. In a large mixing bowl, combine yellow cake mix, eggs, oil, and mandarin oranges (with juice). Mix until combined but with visible orange bits.
3. Pour the batter into the prepared baking dish and bake for 30–35 minutes, or until a toothpick comes out clean. Let cool completely.
4. In another bowl, fold together Cool Whip, crushed pineapple (with juice), and pudding mix until well blended.
5. Spread the frosting evenly over the cooled cake.
6. Refrigerate for at least 1 hour before serving for best flavor and texture.
