Ingredients

4 chicken thighs

1.5 pounds Yukon gold potatoes

2 tablespoons olive oil

6 garlic cloves

1/3 cup grated Parmesan cheese

1.5 tablespoons Cajun seasoning

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Preheat your oven to 400°F (200°C). Wash and halve the Yukon gold potatoes. Peel the garlic cloves but leave them whole. Pat the chicken thighs dry with a paper towel.

2. In a large mixing bowl, toss the chicken thighs and halved potatoes with olive oil, Cajun seasoning, salt, and pepper. Add the garlic cloves and toss again to coat everything evenly.

3. Line a large baking sheet with parchment or foil. Spread the potatoes and garlic evenly, then place the seasoned chicken thighs on top.

4. Roast in the oven for 35 to 40 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are golden brown and crispy.

5. Sprinkle grated Parmesan over the potatoes during the last 5 minutes of baking.

6. Let the dish rest for a few minutes after roasting. Garnish with fresh parsley before serving.

To save time, cut the potatoes into evenly sized pieces.
