Ingredients

1.5 pounds ground chicken

0.5 cup grated Parmesan cheese

0.5 cup plain breadcrumbs

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon salt

0.5 teaspoon black pepper

0.5 cup marinara sauce (plus extra for serving if desired)

Instructions

1. Preheat your oven to 375°F and prepare a loaf pan or line a baking sheet with parchment paper.

2. In a large mixing bowl, combine the ground chicken, Parmesan, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper. Mix until just combined.

3. Form the mixture into a loaf shape on the baking sheet or press it evenly into a loaf pan.

4. Bake for 35 minutes, then remove and spread the marinara sauce over the top.

5. Return to the oven and bake for another 10-15 minutes, until internal temperature reaches 165°F.

6. Let the meatloaf rest for 5-10 minutes before slicing and serving.

Notes

Letting the meatloaf rest before slicing helps keep it juicy and intact.

Add extra Parmesan on top for a cheesy crust.

Use a meat thermometer to check for doneness without overbaking.
